Karne ng kalabaw, tampok sa Filipino Food Month Apr 2021 CaraBalitaan Kardeli, carabeef, meat industry By Chamanei Elias DA-PCC NHQGP—Itinampok ng DA-PCC ang Kardeli o mga produktong gawa sa de-kalidad na karne ng kalabaw bilang bahagi ng pagdiriwang ng Filipino Food Month o Buwan ng Kalutong Pinoy 2021. Ipinalabas ito sa Caralutuan food vlog series sa opisyal na Facebook page ng DA-PCC. Kardeli Ang Kardeli ay nagmula sa mga salitang Ingles na carabao’s meat at delicacy. Ito ay kumakatawan sa masustanya, natural at sariwang karne na nagmumula sa mga kalabaw na dumaan sa maayos, malinis at masistemang produksyon. Kasama ang Kardeli sa Meat Development Program ng DA-PCC sa pagtutulungan ng Product Development and Innovation Section (PDIS), Animal Breeding and Genomics Section (ABGS), Production Systems and Nutrition Section (PSNS) at Carabao-Based Enterprise Development Section (CBEDS). Kasama sa proyekto ang mga sub-program at aktibidad tulad ng breeding, pagpapakain, paggawa ng de-kalidad na mga produktong karne, at pagpapaunlad ng carabao enterprise. “Matagal nang plano ang paglalabas at pagpapakilala ng Kardeli o produktong gawa sa karne ng kalabaw. Sa katunayan ay nailabas na ito sa merkado bago pa ang plano sa Meat Development Program. Ang PCC sa CLSU ay gumagawa na ng tapa, tocino, at papaitan habang ang PCC sa UPLB ay gumagawa ng 10 mga variants ng carabao meat sausage. Layunin ng proyektong gawing pangmatagalang programa ang Meat Development Program na naglalayong pormal na muling ipakilala ang karne ng kalabaw sa merkado,” pahayag ni Patrizia Camille Saturno, Science Research Specialist II ng PDIS. Sa nagdaang mga taon, ang ahensya ay nakatuon sa paggawa ng gatas kung kaya’t nais din nitong maipatupad ang proyektong nakatuon sa produktong gawa sa karne ng kalabaw. Dagdag pa ni Saturno, nilalayon din ng proyekto na bumuo ng isang carabao’s meat line kung saan ang mga kalabaw ay pag-aaralan at partikular na palalakihin para sa produksyon ng karne nito. “Ayon sa mga pag-aaral at pananaliksik, ang karne ng kalabaw ay mas malambot at mababa ang kolesterol kumpara sa karne ng baka. Nais nating baguhin ang mga maling akala na ang karne ng kalabaw ay matigas at mababa ang kalidad. Kung makabubuo kami ng isang linya ng karne, makakagawa kami ng mas mataas na kalidad ng mga produktong gawa sa karne ng kalabaw para sa merkado,” ani Saturno. Itinampok ng ahensya ang mga pagkaing Pinoy gamit ang mga produktong Kardeli tulad ng pre-pack choice cut, gourmet sausages, at specialty quick meal sa buong buwan ng Abril, sa pamamagitan ng Caralutuan food vlog series na ipinalabas sa DA-PCC Facebook page.
