Tradisyunal na pagkaing Pinoy, pinasikat sa Negros Apr 2021 CaraBalitaan Philippine Carabao Center, Department of Agriculture By Eva Rom DA-PCC sa LCSF —Naging bahagi ang DA-Philippine Carabao Center sa La Carlota Stock Farm (DA-PCC sa LCSF) sa inisyatibo ng Slow Food Negros sa pagpapanatili ng mga tradisyunal na pagkaing pinoy sa pamamagitan ng aktuwal na pagtuturo ng pagluluto ng pastillas at dulce de leche na gawa sa gatas ng kalabaw ng DA-PCC sa LCSF. Ang DA-PCC sa LCSF ay aktibong nakikilahok sa pagpapalaganap ng paggawa ng produkto mula sa gatas ng kalabaw upang madagdagan ang kaalaman sa paggawa ng mga tradisyunal na pagkain ang komunidad ng mga Negrense. Ang aktibidad ay parte ng pagbubukas ng Slow Food Pop-Up Earth Markets sa Casa Gamboa Silay City at May’s Organic Garden Kadiwa Market, Barangay Pahanocoy, Bacolod City noong Marso 20 at 27. Ang Pop-Up Earth Markets ay itinatag ng Slow Food Negros na dinaluhan ng mga ahensya sa gobyerno at pribadong organisasyon. Ito ay sinasalihan ng ibat- ibang grupo ng magsasakang negosyante at mangangalakal sa sector ng agrikultura upang maitaguyod ang kanilang mga produktong de-kalidad at maipagbili sa patas na presyo. Ang DA-PCC sa LCSF ay aktibong nakikilahok sa pagpapalaganap ng paggawa ng produkto mula sa gatas ng kalabaw upang madagdagan ang kaalaman sa paggawa ng mga tradisyunal na pagkain ang komunidad ng mga Negrense. Isa na rito si Randy Pedroso ng Victorias Dairy Association (ViDA) na aktibong tinutulungan ng gobyernong lokal sa siyudad ng Victorias at isa sa mga sinusuportahan ng DA-PCC. Si Pedroso ay nakalikom ng kita mula sa paggawa ng flavored milk na mula sa gatas ng kalabaw. Layon ng Slow Food Negros, isang international na organisasyon, na ipakilala ang mga tradisyunal na pagkaing Pinoy at magkaroon dito ng pantay-pantay na access ang mga mamimili samantalang pinananatili ang food safety at environmental protection.
